Swordfish Sicilian Style

This is my favorite way to have Swordfish.  The lemon, oil, garlic and white wine marinade is quick to make and very tasty.  Instead of marinating the fish up front for a long period of time, the marinade is cooked in quickly at high heat after the fish is cooked through. 

Serves 2

4 Swordfish steaks
1 large clove of garlic chopped fine
3 tablespoons chopped fresh parsley
1/2 cup olive oil
juice of 3 lemons
1/2 cup white wine
Salt & pepper to taste
1. Combine oil, garlic, parsley, salt, pepper, lemon juice and white wine in a small bowl.
2. Place swordfish in a lightly oiled baking pan and cook under broiler for around 10 minutes until just done.
3. Pour marinade over fish and cook for 1 to 2 minutes.
4. Transfer swordfish steaks to serving plates, spoon marinade on top and serve.
